Vegetable Medley

Since spring is all about colors, I thought of sharing this vibrant and absolutely delicious vegetable medley recipe with you all. Mix and match vegetables that you have, add some seasoning and voila! you have a lovely dish to enjoy in lunch or dinner. Simply wrap it up in roti or tortilla and savor this very flavorful medley. 

This dish is very customizable to accommodate your choices and liking. Use carrots, green beans, mushrooms and such to add more colors. The more vegetables you have, the merrier. I have used cauliflower, potatoes, sweet peas and peppers. 

Vegetable dishes are very common in Indian households as a part of everyday cooking. Traditionally we call it ‘sabji’ which has a literal translation as ‘vegetable’. We have so many options that can be mixed and matched to make these amazing sabjis. 

To understand it better you can sort of compare sabji to a stir fry. Instead of sauces one would use Indian spices (turmeric, cumin, red-chilli powder, corriander powder, garam masala etc.) to prepare this stir-fry.


Ingredients 

  • 2 medium sized golden potatoes, sliced
  • 2 cup cauliflower florets
  • 2 cup peppers, sliced 
  • 2 cup sweet peas 
  • 3 tspn lemon juice, freshly squeezed 
  • 1 cup cilantro, finely chopped
  • 1/2 tspn cumin seeds
  • 1/2 tspn turmeric powder
  • 1 tspn red-chill powder (adjust to taste)
  • 2 tspn corriander powder
  • 1/2 tspn garam masala powder 
  • 1 tspn salt (adjust to taste) 
  • 1 tbsp cooking oil


Method 

  1. In a non-stick pan, heat oil on high
  2. Once heated, reduce the heat to medium and add cumin seeds. Let them splutter
  3. Now add turmeric powder in the oil and potatoes right after. Mix everything well. Add cauliflower to the pan and give everything a mix again
  4. Add red-chilli powder, corriander powder and salt to the veggies
  5. Give vegetables a mix to make sure seasoning is evenly mixed. Reduce the heat to simmer and cover for 3 minutes
  6. After 3 minutes, add sweet peas to the pan and cover for another 2 minutes
  7. Now check if potatoes are nearly done (soft), if not, cover for 1 additional minute. 
  8. Once you see that the potatoes are almost done then add peppers to the pan. Since we want our peppers to be crunchy, we will add them in the last when our vegetables are almost about to be done. 
  9. After adding peppers, add garam masala powder and gently mix everything. Cover and let is cook on simmer for one last minute.
  10. Finally turn the heat off, add finely chopped cilantro and fresh lemon juice to the vegetables. Mix well and it’s ready to serve.

Tip: If you plan to use other vegetables, add them to the pan based on their cooking times and not all at once since every vegetable has different cooking times.
